 Red Lobster Shrimp Nachos brings together the cheesy flavors of Cheddar and Monterey Jack cheese served over crisp nacho chips and topped with pico de gallo and shrimp.  These baked nachos are more than an appetizer — it’s a complete meal!

Red Lobster Shrimp Nachos

When I recreated this dish in my own kitchen I made one significant change.  When you order this dish at Red Lobster,  it is served with a much smaller shrimp than what I chose to make here. I used a medium-sized shrimp because I wanted a nice big bite of shrimp so this recipe could be served up as a meal, not just an appetizer.  The cheese that tops these nachos is thick and creamy and so much better than just a cheddar cheese sauce. So you are in for a real treat with these nachos.


Ingredients

  • 1 cup cheddar cheese mild
  • 1/4 cup Monterey Jack Cheese
  • 4 ounces cream cheese
  • 1/4 cup milk
  • 1/2 pound shrimp raw peeled and deveined shrimp
  • 2 Roma tomatoes diced
  • 1 tablespoon red onion chopped fine
  • 1 teaspoon jalapeno pepper use more if you like your nachos spicy
  • 2 teaspoons chopped cilantro
  • 2 or 3 slices of fresh jalapeno pepper
  • 2 tablespoons sour cream
  • 4 ounces tortilla chips

Instructions

  • Drop the shrimp into a medium-sized pot of boiling water. I personally like to add a little crab boil seasoning to the water to give the shrimp an additional layer of flavor. This is not necessary. 
  • Cook shrimp until they turn pink, and remove immediately, this will only take 2 to 4 minutes.
  • Prepare cheese sauce by combining Monterey Jack cheese, Cheddar cheese, and cream cheese in a medium-sized pot over a low to medium heat. Add milk to thin the sauce, you can add additional milk if you desire.
  • Preheat the oven to 350 degrees, place tortilla chips on a heat-resistant plate. You will want to heat the chips until they are crisp. Heat chips for approximately 5 to 7 minutes.
  • While the chips are heating prepare the pico de gallo by combining the tomatoes, chopped jalapeno pepper, onion, together.
  • Assemble the nachos by spooning cheese sauce over the nachos. Then top with the pico de gallo you just made, top with shrimp. Garnish your nachos with sour cream, and slices of fresh jalapeno peppers.

Recipe Tips for the Cook

  • I used a medium-sized shrimp because I wanted a nice big bite of shrimp so this recipe could be served up as a meal, not just an appetizer.
  • If you purchase frozen shrimp thaw shrimp completely before cooking. You can place them in a sieve and simply rinse cold water over them until they thaw.

Instructions

  • Melt two teaspoons of butter in medium-sized frying pan. Add onions, cook until they become translucent.
  • Place the cheese and heavy cream together in a medium-sized pan and heat over low-medium heat until the cheese melts. 
  • After the cheese has melted, add green chilis and onions and stir well. 

Recipe Tips for the Cook

I suggest that you use heavy cream, the queso will reheat better than when using milk.  You can serve this in a fondue pot at a party to keep it warm.

Chili’s Awesome Blossom Petals has replaced Chili’s The Awesome Blossom. Instead of the onion in full bloom, Awesome Blossom Petals serves up the onion as separate petals. The petals dish involves a light, flaky breading, a contrast between the sweetness of the onion and a hint of seasoned salt, and a “blossom” dipping sauce similar to a ranch-style dressing. The petals are so much easier to make, especially for home cooks.




Ingredients

Awesome Blossom Sauce

  • 1/2 cup sour cream
  • 2 tablespoons ketchup
  • 1/2 teaspoon McCormick Seasoned Salt
  • 1/8 teaspoon cayenne pepper
  • 1 1/2 teaspoons prepared horseraddish

Seasoned Breading

  • 2 1/2 cups flour
  • 2 teaspoons McCormick Seasoned Salt
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1 cup buttermilk

Awesome Blossom Sauce

  • In a small bowl combine sour cream, ketchup, seasoned salt, cayenne pepper, and horseradish. Stir well. Cover, and place in the refrigerator until you are ready to serve.

Onion

  • First, peel the onion, It will depend on how large your onion is, but you want to end up with cuts that are about 1/2 inch thick.
  • Cut the stem of the onion off and place the onion stem side down on the cutting board. Cut the onion in half vertically and horizontally. You should have 4 pieces, then make two additional diagonal cuts.

Prepare the breading station

  • In a bowl add the buttermilk.
  • In another bowl combine the flour, seasoned salt, black pepper, garlic powder, onion powder, and paprika. Stir with a fork to mix up the breading.
  • Bread the onions by first putting in the flour, then dip into the buttermilk, and back into the flour. Rest the onions on a wire rack.

Cooking the onions

  • Preheat oil to 350 degrees. Add a the onions in small batches, do not overcrowd the onions. Cook for 2 to 3 minutes or until they are golden.
  • Remove from oil, and then drain on a wire rack.
  • Serve.

Recipe Tips for the Cook

You can use vegetable oil for frying. I personally buy generic vegetable oil. You could use peanut oil, canola oil, or even vegetable shortening, all work well.
Be careful not to fry too many petals at once, they will reduce the temperature of the oil, and the result would be petals that aren't crispy.
I like to rest fried foods on a wire rack, resting fried foods on paper towels causes them to steam, where a wire rack keeps them nice and crispy.

You don’t have to go out to enjoy this Japanese dish,  enjoy shrimp deep-fried in this crispy batter when you prepare this from scratch.  It’s super easy to make these delicious Japanese restaurant appetizers in your own kitchen. And, not a single ingredient is difficult to find.

This is a basic and easy shrimp tempura recipe for tasty shrimp in a crunchy tempura batter.


Ingredients

  • 1 1/2 pounds shrimp deveined
  • 1 2/3 cups all purpose flour
  • 1 1/2 cups corn starch
  • 2 cups club soda or super cold water
  • 1/4 cup sesame seeds optional
  • 1/4 cup fresh herbs optional (parsley, chives, thyme are suggested)

  • Peel and devein shrimp.
  • Preheat oil to 350 degrees in a deep fryer or pour enough oil to a large pot to deep fry.
  • Mix together flour, corn starch, and club soda. Stir until just blended. If desired add some of the fresh herbs to the batter.
  • Dip shrimp one at a time into batter. There is no need to dip the tails. Deep fry for about 2 to 3 minutes, the batter should crisp up, do not let the batter brown, the shrimp will over cook.
  • Drain shrimp on a wire rack on top of a baking sheet.
  • Sprinkle sesame seeds and herbs on top if desired.

  • Peanut oil is my preferred cooking oil, but regular vegetable oil will also work!
